Whats the secret to a great raw kale salad? To scrunch the leaves as you massage the dressing through the salad. Give them a really good squeeze until you’re forearms ache. If I can give another tip it would be to shred the leaves as thinly as you can when chopping them up. Strip the leaves from the stalks, kind of bunch a few up and role into a pile on the chopping board, and cut. Use your knuckles closest to your nails as a guide to rest the knife against, and keep your thumb and fingertips behind your index finger knuckle. You’ll be making the best kale salad you’ve ever eaten in no time.
The salad I’m making here was a kind of kale Caesar with parmesan, roast chicken and sourdough croutons. The dressing was a 1/4 cup olive oil, 1/4 cup lemon juice and a teaspoon of dijon mustard shaken in a jar and I used one bunch of kale.

I love that my job allows me to be part of special celebrations, and tonight’s 50th dinner for 18 women was oh so beautiful. Funny. Life affirming. I left them singing 80s power ballads into their wineglasses with the cake still to cut.

My go to energy source on the run. Quite literally

My go to energy source on the run. Quite literally, I stuff these in my running vest for a trail boost.

1 cup almonds (or seeds for nut free)
1 cup dates (medjool are my favorite but any kind will do)
1 cup coconut (desiccated, but whatever you have to hand)
3 tbsp cocoa powder
2 tbsp coconut oil
Pinch sea salt

Blend all ingredients together and roll into balls. If too dry, add a splash of water, if too wet, add a bit more coconut.

This jar is headed to to the @chixsurfschool Winter Wonderland clinic for the ladies before their first surf of the day!
